Anyway, I really love Cafe Rio (and Costa Vida) but sadly I have not been able to find anything like it out here in Mass. John and I have made our own version of their delicious pork salad before, but this time I found some great recipes on another blog where she has spent a lot of time trying to get the flavors just right. Check out her blog here for recipes for the pork, tortillas, dressing, rice, beans, etc. (plus she has lots of other great recipes too!).
Our pork turned out great and it totally fulfilled my Cafe Rio craving...at least for now!
