The other night (I think Saturday), I had the most amazing dinner with John. His sister gave him a recipe for sweet pork, which is very similar to what they have at Cafe Rio/Costa Vida. The pork cooked in the crock pot all day and then that night after a trip to the store to pick up lettuce, pico, tortilla strips, etc. we put our salads together and they were so delicious! It was the best idea ever and much more affordable than going out. I was sad that I left for St. George the next day so I didn't get to enjoy the leftovers, but it was still the best dinner I had in a long time.
If anyone is interested, the recipe is:
Shredded Sweet Pork
6 - 7 pound pork tenderloin (I cut off as much of the fat as I could from the tenderloin)
Sauce:
3 - 8 oz can tomato sauce
2 - 8 oz can El Pato sauce (spicy)
2 cups packed brown sugar
1 cup water
Combine pork and sauce in crockpot on low for 8 hours until tender enough to fork apart. Let sit in sauce and serve.
The portions here makes a ton. I used 2.5 pound pork, 4 oz tom sauce, 1 oz El Pato, 1 cup brown sugar and 1/2 cup water and cooked it for 6 hours on low.
The bottom note is from John's sister, I think, but we still changed it a little for our tastes. John used a little less hot sauce (because he knows I don't like really spicy anything) and then after he pulled the pork apart, he let it cook for about another hour and we added some more brown sugar because it still turned out quite spicy. Anyway, basically you can add hot/sweet depending on what you like.
We had it with black beans and some spanish rice along with shredded romaine lettuce, pico, guacamole, and some tortilla strips. I even took a picture for your viewing pleasure:

I am so glad you posted this recipe. My sister is getting married this weekend and we were just talking about what we should have for lunch--maybe something we could do in the crockpot. This sounds so yummy and could work out really nice. Thanks for sharing!!
That sounds really good. I think I will try this sometime and maybe I'll use the extra meat to make frozen burritos. Yeah.
The great thing about pork is you can do a lot or just a little...plus it reheats well after being refrigerated or frozen.
